Spinach Fillo Dough Patties

This is a quick one! Thought I'd share the fancy lunch the little one will be having at lunch tomorrow. Oh and we had one pre-dinner ;)

We never know with our little son (3 y.o.) what he's going to want to eat! Ugh! Sometimes even the best chefs in the world can feel helpless ;)

Well when me and my wife were in high school (we went to the same one) our lunch options included a 'patty' which is a flaky crusty fillo dough pocket stuffed with whatever, potatoes for us. My wife recreated that oldie with spinach tonight for Neel's lunch!

The stuffing is simple. Boiled potatoes (2 medium sized), 1 cup of spinach, corriander powder, cumin and some seasoning. Throw everything in a pan with a tablespoon of oil, stir it around till you lose all the water out of the spinach. About 10 mins. Let it cool and fill in the fillo dough sheets.
