I love having lentil soup! It's healthy and nutrish and it packs a ton of flavor, not to mention the vegetarian protein in the lentils keeps you going! In India (north at least) Daal as the soup is called, is a staple that is paired with either rice or Roti / Naan. It's common for north Indians to find this on their dinner tables nightly. If you're thinking that doesn't sound very exciting, you might be mistaken. There are several variety of lentils and they all provide a unique flavor and texture and the recipes vary quite a bit so it feels different.
Anyway, we had Spinach Lentil soup for dinner tonight (Daal Palak). It's a very simple recipe and is infused with fresh ginger, garlic, some corriander, cumin and garam masala. Topped off with some fresh cilantro and lime for brightening up the flavor profile. Yum!
I also made paired it with a quick rice side. Boiled some long grain Basmati Rice. In the meantime in a tablespoon of oil toast some cumin seeds and throw in half of a sliced red onion. Fry it on medium for 10 mins. Add rice a pinch of salt and some chopped cilantro. All done.
The flavor of this combination is so peculiar, it takes me back to my childhood, reminding me of those typical daily nightly dinners that I didn't honestly find very exciting back then, but realize what I had been missing all along.
