So it's starting to feel like Fall here in New England, and the slight nip in the morning air is like a lovers morning embrace. The flowing curtains in the living room playfully caress me as I walk by them, the cool air from the windows gives me goosebumps. I reach for the throw on the couch and wrap it around as I make my way to the kitchen.
At this point I'm longing for a hot cup of coffee and then there it is, with its familiar aroma and the promise of a new day. As I settle in my chair by the window, I'm bombarded with hugs from the little monkey and my wife is already in her routine... and right about then, reality hits!
"Daddy, daddy I'm hungry daddy!!" laments my son. Soon he'll be offered myriad options for breakfast like royalty only to settle on one (mostly my last option), serenity is out the window and hello mischievous commotion! Then it's time to get cranking on the adult breakfasts! Eggs—boiled, poached, sunny side up... or sometimes it's smoothies... but today it was this amazing, delicious and gorgeous Greek yogurt parfait.
Thick, creamy Greek yogurt heaped with fresh strawberries, blueberries and kiwis, perfumed with the citrus notes of lemon and tropical burst of toasted coconut, and to top it all—copious amounts of maple syrup. Gorgeous, healthy and quick!
This breakfast is so versatile, so quick and so delicious (and healthy) that it's a no-brainer. It's perfect as a make ahead option the night before or to carry it to work. Give it a shot and mix it uo with any fruit you have on hand!
Maple Coconut & Mixed Berry Yogurt Parfait
Serves 2
Ingredients
I cup Greek yogurt
4 fresh strawberries
3/4 cup fresh blueberries
1/2 fresh Kiwi
1/4 cup Toasted Coconut flakes
1/2 tsp Lemon rind
2 tbsp Maple syrup (add more if desired sweeter)
Start your oven (I have a small toaster oven) and toast the Coconut flakes till they're nice and golden brown 2 to 3 minutes at 350 degrees. Transfer to the fridge for 15 minutes to cool down. The coconut flakes toasts in no time! So be careful and keep an eye or better yet, set a time for 2 minutes to check on them.
Whip the yogurt a bit so it becomes a bit more luscious and creamier. Fold in the lemon rind, and top all the fruit.
Bring out the coconut flakes and sprinkle over the fruit and pour in the maple syrup!
And just like that breakfast is ready! Isn't it awesome that some things in life are just that awesome, gorgeous, simple and delicious! Seriously, this breakfast is a life saver (literally with all the healthy benefits too), you guys must give it a shot.
Oooh and yeah the flavor combo on this thing is da bomb.... I mean, fresh berries sweet and tart, nutty coconut, perfume of the citrus lemon and then the maple syrup all on a bed of thick, tart Greek yogurt. Heaven!
