Pop quiz: What do you get when you string together words like quick, vegetarian, family, healthy, show-stopping and dinner?
Answer: The Royal Cauliflower.
If you've been following me on Instagram you know that I loved sharing this recipe my MIL just made, and also that I'm a big fan of the Cauli (I've made it in so many different ways!) since it's the closest you can come to eating your veggies that has a robust meaty feel.

My 👌momma-in-law👌 made this for dinner tonight and it was as delicious as it was easy! These one pot meals are so easy on the cooking process and cleanup, that I actually feel like they make the food taste better, since you're not beat as a rag doll who's been tossed around. You're going to love it and so will your family.
This cauliflower makes a grand appearance too, as it's baked whole with a quick and easy spiced tomato sauce and served with crisp buttery Naan and refreshing cucumber and toasted cumin raita made with thick creamy greek yogurt. My mouth just drooled again! On to the recipe then👇
Ingredients:
One head Cauliflower
Large pot of boiling water
Sauce:
3 medium ripe tomatoes (chopped)
1 medium onion (chopped)
2 inch piece of fresh ginger (remove skin and chop fine)
4 cloves of garlic (peeled and smashed)
2 tsp coriander powder
1/2 tsp red chili powder
1 tsp Garam masala
1 tbsp salt
2 tbsp oil
Cilantro to garnish
Raita:
1 cup Greek Yogurt
1 cucumber peeled and grated
1/2 tsp toasted cumin seeds
Salt and pepper
Method:
•In a large pot (or a dutch oven) bring 12 cups of water to boil. De-stem the cauli and when the water comes to a rolling boil, add the whole cauliflower to the pot and cover. Steam for 10-12 minutes.
• Preheat oven to 400 degrees
• Heat a pan with 2 tsp oil on medium high. Add ginger and garlic. Toast for 1 minute. Add onions and sauté till translucent. Add tomatoes and sauté for 4 to 5 minutes. Add 1 tsp salt, coriander powder, garam Masala and and red chili powder. Sauté for 2 minutes.
• puree this mix roughly with a hand blender and if it’s too thick for your taste add 1/4 cup to 1/2 cup water and bring to a boil.
•Transfer the steamed cauli to a colander and drain all the water out. •Grease a 9" pie dish with some oil and place the cauliflower in the center. Pour the sauce
evenly all over the cauliflower ensuring even coverage.
•Bake for 10-12 minutes at 400 degress till the edges get some color.
•Garnish with cilantro.
Raita:
Grate cucumber and transfer to a soup bowl. Do not squeeze out juice. Add whisked greek yogurt to the bowl and season with salt and pepper. Top with toasted Cumin seeds.
