Jack Daniel Peach & Fennel Galette

So it's Galette time again! I can't believe I've made so many Galettes already this summer, especially since I'm not a great baker and these pies end up looking pretty "rustic" :))
 Plus you just macerate some fruit and you dump it into some fresh pie dough and bake! It's that easy. So that explains why I've been on the French G roll

This time though I added a bit of a kick to it with some good ol' Jack D and some brown sugar as the base to macerate the fruit. The fennel seeds add a fragrant finish to the bite. Yum!

The fruit tastes fresh, the whiskey adds its own unique undertones and the whole thing comes together simply and beautifully.

And in the spirit of keeping it simple let's check out this recipe


Jack Daniel Pear & Fennel Galette

Ingredients for the filling

2 large ripe Peaches

4-5 small ripe plums

3/4 cup brown sugar

1 tsp Vanilla extract

1 tbsp Lemon juice

Ingredients for the pie dough

Fresh pie dough recipe here

1 tbsp Fennel seeds


You'll need to make the pie dough first. Following the recipe above just add the Fennel seeds with the dry ingredients and follow the recipe as usual.

Once the dough is ready, let it sit in the refrig for about 20 minutes.

Let's pre-heat your oven to 375 degrees

Now for the filling. Slice you pears and plums into thin slices and transfer into a large mixing bowl. Add all other ingredients and mix well. 

Let it macerate for 20 minutes in the fridge.

After 20 minutes bring out the pie dough, and dust your working surface with as little flour as possible.

Set the dough on the surface and start rolling out in continuous one-way motions from one end of the dough to the other. Roll out the dough so it is roughly 9 inch in diameter.

Transfer this dough onto a baking sheet lined with parchment paper.

Place the fruit mix in the middle leaving an inch of folding room. Start folding in the sides over the fruit.

Place the tray in the heated oven and bake for 45 minutes and you're done!
